Our honey pails are an economic way to get our Honeys of Te Urewera. We produce
Natural Raw Honey Pails
Natural Raw Honey is what you have always known as Raw Honey.
It will probably be liquid if it has just been packed. But after a month or more, especially in cooler temperatures, it will become cloudy, creamy or crunchy due to pollen and natural crystallisation, or it might be a mix of these textures.
Note that different varietals and different batches can behave in different ways, but one thing is for sure, raw honey will never be perfectly clear or uniformly liquid year-round.
If the raw honey is crystallised and you want to liquefy it, simply place the jar in a bowl of warm (not hot) water and stir to gently return it to a liquid state.
Raw Honey will taste robust and complex, not just sweet in a one-dimensional way. Enjoy!
Soft-Set Raw Honey Pails
Soft-set is a term that is sometimes used to mean the same as ‘creamed’ in the world of honey, but creaming involves high heat for pasteurisation and to ensure all crystals in the honey are melted out.
In Soft-set Raw Honey production, we achieve a soft smooth texture without high heating, so that we retain the integrity of the raw honey. The main stages in the production of this honey are: low heat to melt; adding small amount of ‘starter’ from the last batch; slow stirring for 12 hours or more.
The result is luxuriously smooth honey with a rich, velvety texture, and all the benefits of raw honey. Enjoy!
