
The taste of the ocean laced with our award-winning Kānuka Honey makes a delish marinade for your favourite mussels.

Ingredients
3-4 dozen mussels in shell
1 cup white vinegar
1 cup mussel stock
1 teaspoon coarsely ground black pepper
1/4 teaspoon salt
1 heaped teaspoon Manawa Kānuka Honey
1 tablespoon sliced or chopped chillies
2 cloves of garlic (sliced or chopped)
2 teaspoons of chopped garlic
1 white or red onion (chopped in chunks or finely sliced)
1 lemon juice
(If you like a lemon kick then add the grated or finely sliced rind)
Directions
- Wash mussels in shell thoroughly.
- Place in steamer over a pot with just 1 cup of water and steam for about 2-3 minutes.
- The mussels should be open and cooked softly but not shriveled. You can test one to check.
- Save the stock that is now in the pot below the steamer.
- Remove the beard from the mussels as you shell them, and place in a bowl.
- Cover and chill.
- Make the mariade by heating the vinegar, stock, seasoning, Kānuka Honey, chilli, garlic and lemon to simmering point then allow to cool, then chill.
- Layer the mussels and onion into jars, adding the marinade as you go.
- Top up each jar with marinade then seal.
If you can wait refrigerate for at least 24 hours before enjoying!
Keep well chilled and these mussels will last at least a week in the fridge. Unless you eat them all before that.
Notes
- This Marinated Mussels is best made with Kānuka Honey which is a crisp, aromatic taste with butterscotch notes. (depending on your palate!)
- If you really like Rewarewa Honey or this is what you have in your kitchen then go ahead and try it.
- You can adjust the amount of Kānuka Honey that you use in this recipe to whatever level of sweetness you prefer.
