Delish Best-Ever Honey Carrot Cake made with Pua-ā-Tāne Wild Forest Honey

So easy to make too – you can get the kids involved, and have some fun in the kitchen. Yes, believe me, they’ll definitely be waiting to lick the beaters or the spoon!

🍴Serves 6-8 🕑Prep time: 20 mins | Freezing time: 2 hours

Ingredients

  • 3 cups all-purpose flour – white or wholemeal
  • 2 teaspoons baking soda
  • ½ teaspoon salt
  • 2 teaspoons ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ teaspoon ground ginger
  • 1 cup (250 ml) vegetable oil or 250g soft butter
  • 1 cup Pua-a-Tane Wild Forest Honey
  • 1 cup brown sugar, lightly packed
  • ½ – ¾ cup milk or buttermilk (to get a good dropping consistency)
  • 1 teaspoon vanilla extract
  • 4 large eggs, at room temperature
  • 4 cups grated carrot
  • 1 cup coarsely chopped nuts – walnuts or pecans
  • ½ – ¾ cup raisins or sultanas (to your preference)
  • 1 cup pineapple pieces, drained and roughly chopped

Cream Cheese Frosting

  • 250g cream cheese, softened
  • ¼ cup softened butter
  • 3 tablespoons Pua-a-Tane Wild Forest Honey
  • ½ teaspoon vanilla extract
  • Pinch salt
  • 2¼ cups icing sugar

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking pans for a sandwich, or one large baking pan for a cake and line pan bottom(s) with baking paper.
  2. Mix grated carrot, brown sugar and raisins in a bowl and leave aside for about an hour.
  3. In a medium bowl, whisk together the dry ingredients – flour, baking soda, salt, cinnamon, nutmeg, and ginger.
  4. In a large bowl, beat the Pua-a-Tane Wild Forest Honey, butter or oil and vanilla extract until creamed then add the eggs, beating in one at a time. If the mixture separates add some of the flour to bring it back together.
  5. Add the dry ingredients, folding in alternately with the milk or buttermilk, until just about blended. Add the nuts, pineapple and grated carrot/raisins. Mix through evenly but do not overmix.
  6. Pour into the prepared pan and bake 50 minutes or until a skewer or toothpick inserted in the centre comes out cleanly.
  7. When cooked, cool the cake in the pan for 15 minutes, then carefully turn it out onto a cooling rack.
  8. Remove the baking paper and cool completely before finishing with the Cream Cheese Frosting.

Cream Cheese Frosting:

  1. In a large bowl, beat cream cheese and softened butter for a minute or two until smooth. Beat in the Pua-a-Tane Wild Forest Honey.
  2. Add icing sugar, vanilla extract, and salt.
  3. Beat for 2 to 3 minutes until creamy. Adjust consistency with more icing sugar if not thick enough; or a little cream or milk if too thick.
  4. Use a butter knife or spatula to apply the frosting to the top of the cake, swirling for effect. Finish with a handful of nuts, chopped or in pieces, on top.

Notes

  • We love the rich flavour of Pua-ā-Tāne Wild Forest Honey in this cake but you could also use Rewarewa Honey or even Kānuka Honey. All these honeys would go fabulously well in this recipe, with their depth of taste to complement the carrots and spice in this cake.
  • You can use all wholemeal flour or all white flour for this recipe or you can use a mixture of these flours, as you wish. We like a 50:50 mix of white and wholemeal flours for giving this cake substance but not making it too heavy.
  • To make Carrot Cake Cupcake, use the same recipe but bake as cupcakes for 14 to 18 minutes (or until a tester inserted into the center of one comes out clean). Let them cool for a few minutes in the cupcake pan before transferring to a cooling rack. The recipe should make 22 to 24 cupcakes.
  • To make a Carrot Cake Sandwich, bake this recipe in two sandwich pans. Double the frosting recipe to have enough for inside and on top of the sandwich. Frost the top of one cake layer, and place the second cake layer on top. Add the remaining frosting to the top of the carrot cake and finish as for the single cake. Optional to frost the sides of the sandwich. Finish with a handful of nuts on top. Delicious!
